you know what’s really odd?

having a toothbrush at someone’s house you never thought you’d allow yourself to be close to, and being told you have a home with them.

feeling some heavy kinda sad.

romantic love is present, but promises of uncertainty established and thoughtless opinions uttered in passing stung.

gotta get overmyself.

everything is open nowadays.

nothing has a label anymore.

i don’t know the necessity in anything, but try to understand the societally enforced solace i often find in these things.

i try to understand the root of jealousy and how much is really needed.

if you have all of your needs met and emotional wellbeing delicately and obsessively cared for - what use is jealousy then?

if you have love in all the forms you craved, what does the outside matter?

finding oneself, finding myself, in a moment in time i never foresaw. confused. happy.

i want to talk about it.

you are precious.

Second time making this is so much better. Instead of following the directions, I roasted the butternut squash for half an hour in the oven, then added it with the remainder of the ingredients in a dutch oven to finish cooking. 

It was smooth compared to the first time when the texture was a bit gritty–didn’t blend well–and it was delicious. Topped it with some shaved parmesan. I’ve wanted to prepare this for my dad since he was released from the hospital–no better time than on his birthday and he loved it!

  • 1 butternut squash
  • ½ large onion, diced
  • 1 apple, diced
  • 4 cups vegetable broth
  • ¼ ground nutmeg
  • ¼ salt 
  • ¼ pepper

About 1-2 hours for cook time, between roasting the squash and cooking on medium-low in a dutch oven. Then blend with an immersion blender until smooth. 

Serve with a swirl of coconut milk or parmesan cheese.

Helpful tip: While the oven is heating, poke holes in the squash with a fork and microwave for a couple minutes (4min worked for me) to help soften. Slice it in half, scoop out the seeds, drizzle with olive oil, then place upside down on a cookie tray lined with foil for easy cleanup. Roast for 30-40 minutes until soft, at 350F.

This was loved so much that I’m making another pot of it tonight.
